Sustainable and rational exploitation of phenolic compounds, as chlorogenic acid, and pectins
from agri-food by-products for the design of active and intelligent films for food packaging
CHLORINACTION project (funded by Next Generation EU and the Italian Ministry for University and Research under the call PRIN: RESEARCH PROJECTS OF RELEVANT NATIONAL INTEREST - 2022 PNRR) is expected to provide a significant step forward in the current state of the art, being its main objective the design and the development of multifunctional films for food application by using phenolic compounds, mainly chlorogenic acid, and pectins sustainably recovered from overlooked sources that is carrot pomace and artichoke by-products. The starting point will be the recovery of chlorogenic acid-rich extracts and pectins from the by-products by means of green chemistry tools. Both the phenolic extracts and the recovered pectins will be subjected to a structural (and also physical and mechanical for the biopolymer) characterization. An extensive screening of the antioxidant, antimicrobial and cytocompatibility properties will allow to select the best performing extracts, which will be then incorporated as such (to provide the active component) and after functionalization (to provide the intelligent component for food freshness monitoring) into the recovered pectins for the implementation of the smart films. These latter will be then characterized in terms of mechanical, antioxidant, antimicrobial, and sensing properties and the potential of the most promising samples will be validated in real food systems.
